The Hidden Environmental Impact of Intensively-Processed Foods: Why the Sector Must Be Accountable
If you examine a package of M&M's, among the best-selling sweets in the United States, you'll notice familiar ingredients like sugar, dried milk, and chocolate fat. However, numerous elements are unfamiliar: acacia gum, starch gum, carnauba wax, soya lecithin, and curcumin.
There are thirty-four components in M&Ms, and at least 30 nations involved in providing them. Every one has its own supply chain that transforms base substances into usable parts – beans into chocolate paste, cane into sugar, petroleum into blue food dye.
These ingredients then journey globally to a main manufacturing plant where they are mixed and converted into tiny multicolored chocolate gems.
It's becoming better understood that food systems are a major driver of the climate crisis. Scientists can study land clearing for farming or methane emissions from livestock. Yet the ecological footprint of ultra-processed foods – like M&Ms – is less clear and is only now to be understood. A key factor they have been challenging to assess is the very nature of UPFs: these factory-produced items include a huge number of ingredients and procedures to put them together, making it extremely difficult to monitor.
But it doesn't mean it's not important. Since UPFs dominate US grocery store shelves and eating habits – they now account for seventy percent of food sold in grocery stores, and over 50% of dietary energy intake – specialists say that understanding their environmental toll is essential to create a greener agricultural system.
What We Already Understand
Although researchers are just beginning to investigate the ecological effects of ultra-processed foods, existing knowledge about them is concerning.
"The greater the processing foods are, the more harmful they are to human health and the planet," said Anthony Fardet. The main reason, he clarifies, is that the components are so resource demanding. When combined, the impact expands significantly.
Take M&Ms. The initial phase in creating the candies is farming for chocolate beans, sugar, milk products and palm.
It has been well-documented that agriculture for ingredients like chocolate drives ever increasing rates of forest clearance worldwide. For over a century, farmland growth has driven nearly ninety percent of global deforestation, which has been responsible for 30% of global greenhouse gas emissions. Major companies have been called out in the past for agricultural methods in their production network, and have since developed sustainability plans, but these fail to address that large-scale agricultural practices are, fundamentally, ecologically damaging.
Additionally, sugar, dried dairy and palm oil – also major greenhouse gas emitters.
Furthermore are the industrially made ingredients like artificial colors – perhaps the signature of intensive manufacturing – which M&Ms contain 13 different types of. The blue candies are dyed with artificial blue dyes; these colorants are primarily produced in industrial color production centers Asia, via a chemical reaction of aromatic hydrocarbons with chemical compounds, catalyzed by the elements copper and chromium.
Producing soya lecithin, an additive made from plant oil that's used to change the consistency of chocolate, requires procedures like oil refining in a hot reactor, chemically isolating fat molecules, bleaching using hydrogen peroxide and dehydrating under vacuum pressure. Similarly, a sweetener, starts off as corn that gets soaked in chemicals before being ground, separated and dehydrated. Afterward, it's broken down into smaller molecules using biological catalysts and acids, and then recrystallized.
Although ultra-processed chocolate products are some of the worst offenders, other kinds of ultra-processed foods are taxing on the planet as well. Take for instance a well-known chip, which has 39 ingredients. Maize is the primary component, and for every hectare grown, one thousand kilograms of CO2 is released to the atmosphere. Like other corporations, producers have developed their own sustainability promises, but many of these promises are supported by practices that are considered greenwashing.
As a result, some experts have begun estimating the ecological cost of ultra-processed foods.
One analysis calculated that well-known sweets generate at least 13.2kg of carbon equivalents per kilogram produced. With yearly output of over 664 million kg in the US, this would mean that the candies emit at least three point eight million tonnes of CO2 – making up 0.1% of yearly carbon output in the country. However, this is only an estimate based on publicly available data; the actual impact is likely much higher, according to specialists.
There's a "black box" when it comes to emissions tracking in the manufactured food sector, notes Patrick Callery who researches how corporations respond to the climate crisis. "There is so much uncertainty as supply chains get complex."
What We Don't Know
Getting an exact measure of the ecological impact of UPFs is extremely challenging, since, by definition, these products consist of many ingredients and a significant number of non-transparent procedures. Ingredients aren't just combined like one would do to make a stew at home. Rather, these ingredients are altered synthetically, some parts stripped away, and flavors, colors or textures incorporated – and it's unclear what the impact of these methods are because numerous providers and components are involved.
A further factor is that every ultra-processed food are the creations of food companies that have minimal motivation to disclose their ecological impact and may not comprehend it to begin with.
As an example, major brands do not farm primary components themselves, but instead depend on hundreds of farms that don't always have precise emissions tracking in place. This means that carbon output from large manufacturers may be underestimated. Analysts said that corporations "don't have real measurements, so they use emissions factors, which are guesses."
Specialists say that corporations provide reports on straightforward aspects like shipping, which are easier to calculate, and frequently exclude or complicate the farming-related carbon of their items. Ultimately, reporting high emissions contradicts the objectives of large food corporations, so the complex calculations needed to establish the environmental impact of large-scale agriculture and complex manufacturing methods used to make UPF ingredients remain understudied.
"The main point of manufactured products is profit," stated the researcher, noting that they're created to be appealing, easy and pleasurable to eat.
"Most of the people in the manufacturing sector's value chain are not concerned with global warming from an ethical perspective, but they are interested in profit," said a specialist. He clarifies that to change these motivations, the value of products and components would need to incorporate their impact on our shared climate. But that would require official policies and financial penalties based on the actual ecological impact of ultra-processed foods.
Why It Matters
For less than two dollars, the cost of popular candies at the grocery store hardly reflects their true cost on the planet. But to tackle these issues with ultra-processed foods, more than just a few tweaks to the component selection are required.
"Reducing the salt, or sugar of just one product is just superficial eco-marketing," stated Fardet. "It is necessary to change the whole picture." To do that, he suggested consuming more locally sourced, unprocessed items, which frequently take far fewer resources and transportation to create, and therefore have a much smaller environmental impact.
